As Japan prepares to welcome the arrival of spring, nature slowly awakens from its winter slumber. Creatures stir beneath the earth, cherry blossoms begin to bud, and fresh greenery breathes new life into the landscape. This season is a time of renewal and reflection — a moment to embrace warmth, change, and the promise of new beginnings.
In this spirit of transition, we invite you to slow down and reflect on the past two months with our latest Ichi-go Ichi-e tea from Yame — Hakusei Premium White Tea. Upon opening the package, we were greeted with a delicate sweetness reminiscent of spring flowers. This unique white tea was carefully crafted by Tataki san, a renowned tea producer in Yame. As we lifted the Kyusu lid, a familiar sweet aroma filled the air, carrying the rich notes of sweet corn and steamed asparagus.
As the water was poured slowly into the teapot, the delicate leaves unfurled, revealing a vibrant green hue. The tea turned a beautiful golden-green liquor in the Gongdao after brewing it for a minute, releasing a captivating blend of vegetal and floral fragrance. Taking a moment to inhale its delicate aroma, we savoured the experience before tasting the tea. You are met with a deep umami note on the first sip, followed by a lingering subtle bitterness that left a lasting impression. These notes gradually softened into a gentle sweetness with floral undertones, creating a beautifully balanced harmony of umami, vegetal, and refined sweetness.
With its low caffeine content and high amino acid levels, this tea offers a soothing and comforting experience, even in the late hours.
